Oh this one looks so good too! Darn now I can't decide which one to make this weekend. lol What is almond paste, is it like almond butter? I've never heard of it before. Cooking for me usually involves microwaving a frozen dinner. lol

Good Morning to all.. Today -Blueberry Waffles(easy) Ingredients: 2 eggs, separated 1 1/2 cups milk 1/2 cup melted butter 2 cups sifted all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1 tablespoon sugar 1 cup fresh or frozen blueberries, rinsed Preparation: In a small mixing bowl, beat egg whites until stiff; set aside. Beat egg yolks; add milk and melted butter. Sift dry ingredients together; add egg yolk mixture and mix until smooth and fold in blueberries. Gently fold in beaten egg whites. Bake in a hot waffle iron. Makes about 6 blueberry waffles.

Apple Oven Pancake: This apple pancake is a quick and easy way to enjoy a pancake breakfast, because it cooks all at once in the oven. Serve this pancake with your favorite syrup or sprinkle with powdered . Ingredients: 2 tart apples, peeled, cored, and very thinly sliced 1/4 cup brown sugar, packed 3/4 teaspoon cinnamon 3/4 cup all-purpose flour 1/4 teaspoon salt 3 large eggs 3/4 cup milk, whole or 2% 1 teaspoon vanilla extract 3 tablespoons butter, melted Preparation: Heat oven to 425°. Put a cast iron or oven-proof 9- or 10-inch skillet in the oven. In a bowl, combine the apple slices with brown sugar and cinnamon; toss gently to coat well. In another bowl, mix flour with salt. In a large cup or small bowl, whisk together the eggs, milk, vanilla, and 1 tablespoon of the melted butter. Take the pan from the oven and add remaining butter; swirl to coat the bottom of the pan. Arrange apple slices over the bottom of the pan. Pour batter over apple slices. Bake for 25 to 30 minutes, until puffed and lightly browned. Serve with syrup or sprinkle with powdered sugar. Serves 4.

Lemon Blueberry Cheesecake Bars: Enjoy the flavors of lemon and blueberry in these tasty bars. The cheesecake filling is made with lots of lemon zest and fresh blueberries, all on a brown sugar and pecan shortbread crust and topped a crumbly mixture. Cook Time: 40 minutes Total Time: 40 minutes Yield: Makes 16 Bars Ingredients: ***Crust*** 1 cup all-purpose flour 1/2 cup finely chopped pecans 1/3 cup packed brown sugar 6 tablespoons softened butter ***Filling*** 1 package (8 ounces) cream cheese, softened 2 tablespoons fresh lemon juice zest of 1 lemon 1/4 cup granulated sugar 1/2 teaspoon vanilla extract 1 large egg 1 cup blueberries Preparation: Heat the oven to 350°. Lightly butter a 9-inch square baking pan. In a bowl combine the flour, pecans, brown sugar, and softened butter. Work the mixture together with fingers until crumbly. Reserve about 1/2 cup of the crumbs and set aside. Pat the remaining crumbs in the prepared baking pan. Bake for 12 minutes, or until lightly browned. Meanwhile, in a mixing bowl, beat the cream cheese until light. Beat in the lemon juice and zest, granulated sugar, vanilla, and egg. Beat on medium speed for 2 to 3 minutes, scraping the sides of the bowl occasionally. Spread the cream cheese mixture on the browned crust. Sprinkle evenly with the blueberries, then sprinkle the reserved crumb mixture over all. Bake for 25 to 30 minutes longer, until lightly browned. Cool then refrigerate until serving time.

Fluffy Frosting Cake Sometimes called White Mountain frosting, this is an easy and somewhat less sweet frosting than buttercreams and others. The sugar syrup is slowly beaten into egg whites to make a light and fluffy frosting with no fat. Ingredients: 1/2 cup water 1 1/2 cups granulated sugar 2 tablespoons light corn syrup 3 egg whites 1/2 teaspoon cream of tartar 1 1/2 teaspoons vanilla extract Preparation: Place water, corn syrup, and sugar in a saucepan. Stir, cooking, until sugar is dissolved. Boil to about 232 to 236, or until syrup spins a thread when a little is dripped from a spoon. Place egg whites and cream of tartar in clean, grease-free bowl. Beat with hand-held mixer or wire whisk attachment of stand mixer until egg whites begin to hold their shape. Continuing beating, gradually adding hot syrup in a thin, steady stream, about 1 to 1 1/2 minutes. Add vanilla and continue beating for about 5 minutes or until frosting loses gloss and stands in stiff peaks. Frost cake immediately. This makes enough to frost a large angel food or 2-layer cake.
